As kids growing up in South Africa, our parties were very different to the ones my kids have now we live in England. Back then, we would arrive to a table laden with party treats, and after playing the games we'd sing happy birthday, blow out the candles, grab a paper plate full of birthday cake and sweets and crisps and ice cream cones made to look like clown hats filled with sweets, and scoff the lot until our parents came to take us home. Occassionally, the party treats would have been put into boxes or bags which we could take home with us if there was anything left to take. Here in England, not only are the kids treated to a sit down arrangement of snacks, sandwiches, cupcakes, and sweets, but the birthday cake is cut and wrapped and placed into party bags with even more sweets and treats for the kids to take home! I guess it's fun being a kid at an English birthday party, but I loved the good old fashioned South African way of doing things!

I was on birthday cake duty last Friday, when three friends hosted a spectacular joint birthday party. There were no allergies, but chocolate had to be involved. I briefly toyed with the idea of making three cakes, each one with a different spin on chocolate cake (chocolate sponge with fresh fruit and whipped cream for a modern look, chocolate cake with malt buttercream for the five-year-old in everyone, and a hefty chocolate and stout pound cake for the "too cool for birthday cake" crowd). Alas, all the recent moving and tango classes left me with very little free time, so I settled for one cake - a towering concoction with four layers of tender chocolate buttermilk cake and strawberry-filled chantilly cream in between.

I made a cake that looked a little like these last fall. I wanted to turn the cake into little cupcakes that looked like Apple Baskets. I think I was successful! They are Applesauce Spice flavor with buttercream icing and royal icing apples. I cooked them in parchment paper cups to give it more of a "basket" feel. All you have to do is cut parchment paper into squares and press them down into your cupcake pan. Easy and beautiful! Plus, I ALWAYS have parchment paper on hand, but not always cupcake liners!!! I decided to box them up and donate these to the Officers' Spouses' Club for the November luncheon as an "opportunity" which is just the Army's way of saying "raffle prize" I hope someone finds them delicious!!!!
